Shamrock Sugar Cookies

Cooper's Corner
1 1/2 cups powdered sugar
1 cup of butter, softened
1 egg or egg-substitute
1 tsp. vanilla or lemon or peppermint extract 2 1/2 cups all-purpose flour
1 tsp. baking sodag
1 tsp. cream of tartar (if using self-rising flour, omit cream of tartar)

Mix powdered sugar, butter, egg, vanilla. Mix in flour, baking soda and cream of tartar (if using). Cover and refrigerate 2 hours. Heat oven to 375 degrees. Divide dough into halves and roll each half about 1/4 inch thick on floured board. Cut into shamrock shapes. Place on lightly greased baking sheets or parchment liners. Bake 7 to 8 minutes, until edges are lightly browned. Makes about 5 dozen 2-inch cookies.
