1 package Tator Tots
2 cans cream of mushroom soup (optional: 2 cans of vegetable soup)
1 lb hamburger
1 onion
1 bag of frozen vegetables, or 1-2 cans of green beans
salt & pepper to taste
Dice the onion and sauté in frying pan. Add hamburger and any seasoning, then fry until cooked thoroughly. Mix all ingredients thoroughly and spread out in a rectangular baking dish. Cook in 350° F oven until heated thru.

Rice Casserole
(Scott's Casserole)
2 cups uncooked rice 2 cans cream soup
1 lb hamburger
1 onion
1 bag of frozen vegetables
chinese noodles
cheese (grated)
salt & pepper to taste
Cook 2 cups of uncooked rice as per package directions then set aside. Dice the onion and sauté in frying pan. Add hamburger and any seasoning, then fry until cooked thoroughly. In a separate bowl combine cooked rice, hamburger, cooked vegetables, soup, salt & pepper. Mix all ingredients thoroughly and spread out in a rectangular baking dish. Spread Chinese noodle across the whole surface and top with grated cheese. Cook in 350° F oven until heated thru and cheese has melted.
Optional: you can use any of the cream soups, cream of mushroom, celery, broccoli. Frozen vegetables that I have tried are peas and broccoli, both are very good. For a lower fat recipe leave off the Chinese noodles and cheese.

2 C. flour
2 C. oatmeal
1 ½ C. brown sugar
1 t. baking soda
½ t. salt
Pour:
1 ½ C. (3 cubes) melted butter over mixture. Combine to form crumbly mixture and press ½ of this mixture in a greased 9X13 pan. Bake at 325 degrees for 17 minutes.
Remove from oven and pour over top of hot crust:
12 oz. milk chocolate chips
1 jar Mrs. Richardson caramel topping (found by ice cream toppings)
Top with remaining ½ of crumb mixture. Bake an additional 17 minutes. Let sit several hours before serving-even overnight works great!

Confetti Salad

This is a great salsa that Laura made for Jacque's homecoming.Dressing:
1 clove minced garlic
1/4 cup red wine vinegar
1/4 cup vegetable oil
1 Tablespoon sugar - you could probably use less or leave it out
Salt and pepper to taste
Salad:
2 cups cooked black beans (or 1 can), rinsed and drained
2 cups frozen corn (or 1 can), defrosted and drained
1/2 cup chopped green pepper
1/2 cup chopped red pepper
2 green onions chopped
Mix the salad ingredients, mix the dressing ingredients, then pour the dressing over the salad and mix together. You can eat it as a side dish as it is or serve it with tortilla chips.

Pier 49's Embarcadero Pizza

Ingredients:

• 31 oz pizza dough ball
• 1/3 c pesto sauce
• 3/4c mozzarella cheese
• 3/4 c southwest seasoned grilled chicken
• ½ c signature special cheese blend (we would recommend an Italian cheese blend if purchasing in a grocery store)
Method:
Roll out the pizza dough into a 16 inch circle. Evenly spread the pesto sauce onto the pizza crust. Sprinkle on the mozzarella, chicken, and the special cheese blend. Place in a preheated oven on 400⁰ bake for 20 minutes. Enjoy!

A Taste of the Good Life
INGREDIENTS:
Brownie:
1/2 cup butter
2 squares unsweetened chocolate
1 cup sugar
2 eggs
1/2 cup flour
1 cup chopped pecans
1/2 teaspoon vanilla (Optional)
Frosting:
1 cup sugar
1/2 cup butter
1/4 cup milk
1/4 cup cocoa
TO PREPARE:
Preheat oven to 350 degrees. Melt butter in a double boiler. When melted, remove from fire and add sugar and beat well. Add eggs, one at a time, beating after each addition. Add flour, nuts and vanilla. Mix well. Pour into a greased and floured 9 x 9 pan. Bake for 20 to 25 minutes. (Do not overbake. These are supposed to be moist.) To make frosting, mix together all ingredients and bring to a full boil over low heat, stirring constantly. Cook exactly 1 minute – NO LONGER. Remove from heat, cool, stir and frost. Let frosting harden before cutting brownies.

NOTE: For Middle-eastern version, add ½ tsp of powdered oregano mint (Mentha origanum)

1 can chickpeas (19-oz)
1. In a colander thoroughly drain and wash the chickpeas until they stop foaming
2. Combine all ingredients in a food processor or blender
3. Process til smooth and creamy
4. Serve with pita bread wedges, other types of bread, crackers; or use as a vegetable dip
